An espresso is usually 25-30ml extracted in approximately 25-30 seconds and is the building block of most of the following coffee-based drinks. A good shot of espresso will exhibit 3-5mm of crema.
- Use a small espresso or short black cup
- Fill with a 25-30ml shot of espresso

Long Espresso
Long Espressso (Long Black)
A long espresso is created by first filling the cup with hot water (from the hot water tap) ensuring room for the shot of espresso that is extracted on top of the hot water to maximise the crema.
- Firstly fill the cup with hot water (approximately 2/3 full)
- Extract a 25-30ml shot of espresso on top of the hot water

Flat white
Flat white
A 'Flat white' consists of approximately 1/3 espresso, 2/3 of textured milk and a thin layer of micro-foam on the surface. It is generally served in a cappuccino cup but differs from the cappuccino in that it has less micro-foam and no chocolate dusting on top.
- A 25-30ml shot of espresso
- Fill with silky textured milk
- Less than 5mm of foam

Caffe latte
A latte is an espresso based milk drink that is usually served in a glass. It consists of a shot of espresso topped with textured milk and features around 10mm of micro-foam on the surface of the drink.
- 25-30ml shot of espresso
- Filled with textured milk
- Approximately 10mm of foam
